I am going gluten free for a while to see if it helps my health, does anyone here have any favourite gluten free recipes???

My DD has Celiac Disease (since she was about 14 months old) so is on a gluten-free diet. I don't cook from scratch so I don't have any recipes. But if you have a Whole Foods or Wild Oats or similar health food store, there are a lot of pre-made GF foods now like Kinninnick pizza crusts, rice pasta, and even donuts!

This is a nice bread/roll with tapioca flour. A lovely Brazilian friend turned me on to this bread. I've used this recipe with half the oil and added cheese.

This bread is lovely for breakfast with hot coffee or lunch, dinner or snack. It is definitely best hot from the oven.

Strangely enough I am not really craving anything with gluten in it. Yet :D I sort of miss my morning porridge but I can cope with that.

Hubby and I will be checking out various places that sell GF. Thankfully the local supermarkets are getting into it.

Stacy how do you not cook from scratch? All prepared meals? I am trying to go the opposite way, and eat as natural as possible LOL

Day 3 and I am enjoying feeling more awake!

Wow that sounds amazing! I will have to find where to find the flour :) but once I have I will be trying that! How do you find the texture?

The texture is fantastic. Crispy on the outside and chewy inside. The dough is unlike anything else I've made. If it's really stretchy and glue-like you're on to something.

I found Tapioca at my regular super market.

The flour or the tapioca itself? I am thinking of maybe buying a coffee grinder to make my own rice flour etc - will have to work out what is cheaper here.

I'm don't have celiac disease, but my son's teacher does so I have been looking for yummy GF treats to make for her all year. The best - super easy - treat I found (via my friend Tom) was a recipe for Peanut Butter cookies. It does have egg in it though, so you might need to substitute if that is a problem for you. They remind me of my mom's peanutbutter balls she used to make me when I was a little girl. I think nostalgia makes a recipe even tastier! and it's SO easy.... I'm really not even kidding, I started mixing at 7:45am and had the cookies cooled, bagged, and on the bus to school at 8:15am! Are you excited yet? You should be! Here you go:

Tom's GF Peanut Butter Cookies

1egg
1cup sugar
1cup peanut butter

Preheat oven to 350*. Beat together egg and sugar, mix in peanut butter. Use spoon to drop rounded dough onto a prepped cookie sheet (I used vegetable spray, Tom uses a Silpat sheet) about 13 medium size cookies. Bake 10-12 min. As soon as they begin to brown, they are done. Let cool on cookie sheet. ENJOY!

Ok... just typing this makes me want to make some! :bigsmile:

Rice Krispie treats are always good too, and GF with the standard recipe.

Thanks for these links, Stacey. I didn't know Rylee has Celiac Disease. My granddaughter, Lindsey, has gluten and dairy product allergies. She hasn't been tested for Celiac yet, but will be soon. I need to find some recipes to make for Lindsey. She is SO good about reading the ingredients on food packages herself. I would love to see more conversation about gluten free (and dairy free) recipes.
